Vanilla Ice Cream
Chili Caramel Sauce
Chili Confit
  • red pepper (brunoise) 10 g
  • sugar water 100 ml
Smoothie
Plating
  • dried strawberry crunch 10 g
  • citrus confit 2 g
  • caramel sauce 20 ml
  • chili confit 5 g
  • pistachio crunch 10 g
  • caramel crisp 100 g
For the Vanilla Ice Cream
  1. Boil all the ingredients in a pot, then sieve. Pour the ice cream base into an ice machine and churn until frozen.
For the Chili Caramel Sauce
  1. Boil the sugar to 170°c, then add the Rama 31% at once and whisk. Add the Flora Plant B+tter, salt, and vanilla pods, and whisk again.
For the Chili Confit
  1. Add the chili pepper into boiling sugar water, and leave for 10 minutes at 90°c.
For the Smoothie
  1. Mix all the ingredients except the whipped cream in a blender. Pour the smoothie into 10 glasses and divide the whipped cream on top.
For Plating
  1. Divide the ingredients on top of the whipped cream.
