Gazpacho
  • 200 g fresh peas, blanched
  • 2 large ripe avocados
  • 60 ml extra virgin olive oil
  • 1 mild green chilli
  • 100 g spring onion
  • 300 g green heritage tomatoes
  • 30 ml sherry vinegar
  • 1 clove garlic
  • 2 lime, juiced
  • 200 g baby spinach leaves
  • 30 g Thai basil
  • 30 g coriander
  • 30 g mint
  • 1 large cucumber, chopped
  • 300 ml Flora Plant Cream Double 31% Fat
  • 400 ml water
  1. Put all the ingredients except the flora plant cream into the food processor and blend until smooth using the water to adjust the consistency.
  2. Season with freshly ground black pepper and flaky sea salt, adjust taste with more sherry vinegar if required.
  3. Stir in the Flora Plant Cream. Chill for up to 24 hours or at least 2 hours and served chilled.
  4. Garnish with ciabatta croutons, a drizzle of flora plant cream, olive oil, blanched peas, cucumber and tomato, toasted seeds, chilli flakes and herbs.
